Boston butt
The name of this piece of meat always brings to mind the back of a pig… the lower back. However, it is really the upper part of the shoulder, which is highly appreciated by those who adore a barbecue and other grills. The Italians rightly named the tasty piece of meat that comes from it ‘coppa’, meaning pig’s collar or neck fillet. But what’s the origin of this name? It comes from Boston in America, where it was common to brine and preserve this meat in a wooden barrel called a ‘butt’. Hence the term Boston Butt, of course!
